This article focuses on how measurement of texture is important for assessing fruit maturity, storage potential, and consumer preferences. There are two common methods for measuring texture. Fruit tissue is made up of thousands of tiny living fluid-filled bags called cells. The fluid is needed to inflate the bag into a spherical shape. The fluid represents the cell contents and the bag represents the cell wall. The force required to pull apart samples of apple tissue was a better predictor of mealiness than measurements made using a penetrometer. |
