Abstrakt: The article focuses on vineyard nitrogen (N) management and must and wine composition. Topics discussed include Vineyard N management affects the N status of vines which affects the concentrations N in berries at harvest, nitrogenous compounds includes amino acids and ammonium; and rate of fermentation being related to the availability of Yeast Assimilable Nitrogen (YAN).
