Abstrakt: Describes a series of experiments conducted to determine the influence of off-flavors geosmin and 2-methylisoborneol (MIB) on the flavor evaluation of farm-raised catfish. Flavor of geosmin and MIB persisted after tasting; Inability of trained panelists to accurately recognize geosmin and MIB; Proposal for a simplified off-flavor intensity rating system.
