Abstrakt: The expediency of using aqueous alcohol solutions for extraction of flavonoids is revealed with the use of molecular mechanics. The optimal regimes (ratio of water and alcohol ratio, hydrochloric acid concentration, temperature and length of treatment) of extraction of flavonoids from grape pomace are established by experimental design and data processing methods according to the spectral analysis results.
