Abstrakt: The nutritive values of the seeds of African mango (Irvingia gabonensis), water melon (Citrullis vulgaris) and locust bean (Parkia filicoidea) were determined using pepsin/pancreatic and pepsin/trypsin hydrolysis. The two methods gave very similar results which correlated with the true digestibility (TD) of the protein as determined by rat‐feeding trials. The highest digestibility value for the in vitro method was obtained with Parkia (97.3 and 97.8 with a TD of 97.6) followed by Citrullis (96.4, 97.0 and a TD of 96.2) and Irvingia (93.5, 93.9 and a TD of 93.5). This preliminary research has promise as a means of screening other potential protein materials, but further research on larger sample numbers is required. [ABSTRACT FROM PUBLISHER]
