Soluble acetoin dehydrogenase was studied in a haploid strain of Saccharomyces uvarum. ( R,R)-Butanediol dehydrogenase activity was not detected in any step of purification. The optimum pH was 7.0 and the optimum temperature 40°C. The enzyme activity under anaerobic conditions was lower than under aerobic conditions. [ABSTRACT FROM AUTHOR] |
