Abstrakt: Matsun is traditional Armenian fermented milk product like to yogurt. It is known by its potential health benefits. The aim of these investigations was comparative analysis of predominant Lactobacillus isolates of kefir and matsun. The results of our investigations on matsun microflora were shown the presence of L. helveticus, L. fermentum and L. rhamnosus in all types of kefir grain from not only the different sources of Australia, but also in Armenian matsun with different origin.
