Abstrakt: The article discusses a study on whether variations in diet could effect the acid-neutralizing qualities of saliva. Researchers measured pH levels in the saliva of various volunteers who were placed on controlled diets. It was found that diets high in grains decreased the ability of saliva to neutralize acid, and diets high in fruits, vegetables, and meats increased this ability.
