Hobbs' bacon is best smoked for 16 hours over applewood chips and the best way to eat it is with a bacon, lettuce and tomato (BLT) sandwich. Masa, the main ingredient in tortillas, is best cooked by boiling corn with lime and grinding it, while chiles should be tasted before cooking with them as they vary in strength. |
