Abstrakt: | The article describes Southwestern cuisine offered by two restaurants, namely Cactus in Denver and Arizona 206 in New York City, and Southwestern food products sold by food companies. Southwestern cuisine is spicy and hot, such as chili-stuffed avocados in cornmeal, pepper sauce and venison chile. Food companies offer fajitas and fire-powder spices. Authentic regional cuisine has cilantro, an herb that is hard to find outside the Southwest. |
