A recent study conducted by the Institute of Food Science and Technology focused on the effects of Stevia rebaudiana Bertoni cookies on metabolic syndrome in rat models. The study found that replacing sucrose with Stevia powder and extracts led to reductions in blood glucose levels and cholesterol, as well as improvements in insulin levels. The research concluded that Stevia cookies showed health-beneficial effects without significant impact on liver, renal, and hepatological parameters, making them a potentially suitable addition to cookies.
