A study conducted at Federal University in Natal, Brazil, explored the biotechnological potential of Lacticaseibacillus paracasei Shirota in producing bioemulsifiers, bacteriocins, and lipase. The research found that L. paracasei showed inhibitory activity for amyloglucosidase and exhibited lipolytic activity.
