Abstrakt: A study conducted by researchers at Northwest University in Xi'an, China, explores the absorption and transformation mechanism, as well as the biological function, of selenium-enriched edible fungi. The study found that selenium-enriched edible fungi contain bioactive components such as selenium polysaccharides, selenoproteins, and selenium polypeptides. However, the forms and transformation rate of selenium in these fungi are influenced by various factors, including species, cultivation techniques, and biotransformation methods. The research aims to provide a reference for the precise enrichment of selenium in edible fungi and to support the development of highly active forms of selenium. [Extracted from the article]
