Bake your way to bliss!MAKES 12 Preheat oven to 180°C.Whisk 1 egg white with a pinch of sea salt until light, frothy and white like a meringue. Blend 74g coconut oil, 4 tbsp maple syrup, 100g desiccated coconut, 100g ground almonds, finely grated zest of 1 lemon and 2 tbsp lemon juice together in a separate bowl. Fold the whipped egg white into lemon mixture. Spoon 1 tsp rounds of mixture on to a baking sheet.
