A recent study conducted by researchers at the State University of Maringa (UEM) in Brazil aimed to evaluate the perception of vegan and non-vegan consumers regarding probiotic almond-fermented beverages processed by ultrasound. The study found that the information about the ultrasound processing did not negatively impact the acceptability and emotional profile of the beverages. However, including a claim on the label improved consumer perception and increased purchase intention. Vegan consumers showed a more positive perception of ultrasound processing compared to non-vegan consumers. The study concluded that almond aroma, flavor, and consistency were the most important attributes for consumer acceptance of these beverages. [Extracted from the article] |
