A study conducted at Henan University in China has identified a novel ACE inhibitory peptide, IEWEF, in the water-soluble protein fraction of Pelodiscus sinensis meat. The researchers used bioinformatics methods to screen for bioactive peptides in the proteins of the meat. The peptide IEWEF was found to be a non-competitive ACE inhibitor, and molecular docking revealed its ability to tightly bind to ACE. This research provides a workflow for the identification of novel ACE inhibitory peptides from complex protein mixtures. [Extracted from the article] |
