Abstrakt: Solar drying technology has proved to be an eco – friendly and economical method of preservation of food. Many seasonal food crops have been used throughout the year due to many developments in the field of solar drying. One such crop is mango. Wastage of excessive production of mango is reduced by this method. This study investigates the different drying techniques of mango slices that are, in open drying, in direct cabinet solar dryer with phase changing material and in direct cabinet solar dryer without phase changing material. 100g of mango slices are taken for each drying. Paraffin wax is used as a phase changing material. From the whole study, it is concluded that the solar dryer with PCM has reduced the moisture content of the mango from 84% to 25% within 10 hours when compared to other two methods. Using the PCM has also helped to store the heat which resulted in effective and expeditious drying of mangoes. [ABSTRACT FROM AUTHOR]
