A study conducted at Hainan University in Haikou, China explored the effects of mango and partridge tea extracts on the quality of tilapia fillets treated with in-package cold plasma during refrigerator storage. The study found that the addition of mango extract combined with cold plasma treatment inhibited microbial growth, lipid oxidation, and protein oxidation in the tilapia fillets without significantly affecting their color. The research suggests that natural extracts can be used as antioxidants to improve the quality and safety of food products. [Extracted from the article] |
