Abstrakt: Researchers from Egerton University in Nakuru, Kenya have conducted a study on the production of pectinolytic enzymes using orange processing waste as a substrate. The study focused on optimizing various process parameters such as temperature, pH, and incubation time. The researchers found that the maximum enzyme activities were observed at 35 degrees Celsius and pH 4.0 for 6 days of cultivation. The enzyme extract was effective in improving juice yield and clarifying the juice. The findings suggest that this approach could be useful for industrial-scale production of pectinolytic enzymes.
