Studies from Umm Al-Qura University Yield New Data on Cholesterol (Levels of Monochloropropane-diol and Glycidyl Esters In Heated Palm Oil and Assessment of Their Risk In the Animal Model).

Abstrakt: A study conducted by researchers at Umm Al-Qura University in Mecca, Saudi Arabia, examined the effects of heated palm oil on rats' lipid profile, liver and kidney functions. The study found that heat-induced pollutants, such as 3-monochloropropane-1,2-diol esters (3-MCPD-Es), 2-monochloropropane-1,3-diol esters (2-MCPD-Es), and glycidyl esters (G-Es), were present in heated palm oil and could pose a potential risk to consumers' health. The research concluded that monitoring the levels of these pollutants in heated palm oil is necessary. The study was published in the Journal of Food Measurement & Characterization and was funded by the Deputyship for Research & Innovation, Ministry of Education in Saudi Arabia.
