A recent study conducted by researchers at the Tokyo Institute of Technology in Kanagawa, Japan, explored the role of key genes in exopolysaccharide (EPS) synthesis and immunomodulatory effects in Lactobacillus delbrueckii subsp. bulgaricus OLL1073R-1. The study found that the deletion of certain eps genes resulted in reduced production of high molecular weight EPS (H-EPS) and affected the induction of IL-6, IL-10, and IL-12 in THP-1 dendritic cells. This research provides new insights into the relationship between EPS synthesis and immunomodulatory activities in Lactobacillus delbrueckii.
