Abstrakt: |
A recent report from the Centre for Research and Innovation discusses the use of an NMR metabolomic approach combined with multivariate analysis to distinguish between Protected Designation of Origin (PDO) Grana Padano cheese and non-PDO cheeses. The study found that PDO cheese has a distinct profile of metabolites that can be used for authentication purposes. The research suggests that this approach could be a valuable tool for checking the authenticity of PDO cheeses in the future. The study was supported by the Autonomous Province of Trento, Italy.
