Performance evaluation and quality improvement of two-stage pasta extruder machine using quality function deployment (QFD) method.

Abstrakt: The Research Center for Agroindustry developed the two-stage pasta extruder machine for making pasta products, such as noodles, macaroni, and sago rice. This machine has been used in several regencies in Indonesia. This supports the national program of food diversification based on local resources. The machine must be evaluated to get the best results and satisfy its users. The objective of this research was to evaluate the performance of the two-stage pasta extruder machine and to formulate product improvement strategies. Data was collected through questionnaires to the machine users in Grobogan (Central Java), Kupang (East Nusa Tenggara), and Jayapura (Papua) regencies. The data processing technique used in this research is to translate user desires into the technical specifications of products using the Quality Function Deployment (QFD) method. The level of user satisfaction with the machine was used to assess machine performance. The results of this study obtained 25 product satisfaction attributes, all considered necessary by users. The average level of user satisfaction with the machine's performance reached a score of 3.19 or was in the satisfied category. Strategies to improve the quality of this machine include: a) using a reliable driving machine by paying attention to the energy required; b) availability of spare parts components; c) adding a fan to the motor housing; d) housing screw equipped with an automatic heat limiter indicator; e) use of a blade mixer and speed controller; and variations in the gear size for the screw.
