The enzyme β-galactosidase, commonly known as lactase has been isolated, purified and characterized from various microbial, plant, animal and recombinant sources. The enzyme is a tetrameric structure with four identical chains. β-galactosidase is of immense importance because of wide applications in food industries. The enzyme is used in the production of lactose-free milk and milk-related products. Deficiency of β-galactosidase in the human body may lead to lactose intolerance, therefore its intake can combat problems associated with lactose intolerance. The enzyme is not only employed for the manufacture of lactosefree products but also used for the production of galacto-oligosaccharides (GOSs), an important class of prebiotics. The enzyme can be exploited for biosensor development and other biotechnological applications. This review focuses on structure and sources of β-galactosidase, its properties, purification techniques and a panoramic view of various applications. The timeline is limited post-2010.
