The hydrolysis of guar galctomannan by various non-specific enzymes resulted in the release of oligosaccharides with varying degree of polymerization (DP). The nature of oligomers and monomers released as a result of enzyme catalysis was deduced by HPLC, MALDI-TOF-MS and GPC analysis. Additional, to characterize the possible alignment of monomers in the oligomeric sequence and the mode of action of enzymes, the oligomers, separated on Biogel - P2 column were treated with ß-mannanase, ß-mannosidase and a-galactosidase. Further, a comparative disparity in the oligomeric profile observed revealed a different mode of action of pullulanase, pepsin and pectinase towards hydrolysis of guar galactomannan. Thus, the utilization of non-specific enzymes for modification of guar galactomannan is of commercial interest due to the relevance of galactosyl-mannooligomers as various functional food ingredients.
