Abstrakt: China is a big country in the production and consumption of edible fungi, and the production and processing of by-product fungus bran has a huge output. The fungus bran is rich in crude fiber, K, Ca, Mg, Fe, Na, Mn, Zn, Cu and other elements, and also contains polysaccharides, flavonoids, xylooligosaccharides, laccase, peroxidase, melanin, cordycepin and other active functional ingredients. If heavy metal, mycotoxin, pesticide residues and harmful microbial content meet the limit requirements, the fungus bran has the potential to be developed into a new type of feed for ruminants. After fermentation, probiotics were introduced into the fungus bran, which enriched the chemical and active components of the fungus bran, greatly improved the palatability, and further increased the applicability of the fungus bran as feed. In the paper, the nutritional composition, safety and application of various common fungi in ruminant breeding were discussed, so as to provide reference for the research and application of fungus bran feed.
