A recent study conducted by researchers at Universidad Politecnica Salesiana in Ecuador explored the bioactive compounds and antioxidant capacity of 51 non-traditional fruits consumed in Ecuador. The study found high levels of vitamin C, organic acids, carotenoids, and phenolic compounds in various fruits.
