Abstrakt: Pectins are natural heteropolysaccharides that are part of the cell wall of higher plants. In industrial conditions, pectins are obtained from waste from the production of fruit juices, sometimes from waste from the production of beet sugar or vegetable oils. The diet of an average Ukrainian contains a sufficient amount of vegetables and fruits containing apple pectin. The purpose of this review was to summarize data on the structure, physical and chemical properties of pectins and analyze information on the use of apple pectin in medicine and pharmacy.
