Studies from Universidad de Concepcion Have Provided New Data on Food Research (A Simple Validated Method for the Estimation of Pepsin Activity in Microtiter Array for the INFOGEST Protocol).

Abstrakt: A recent study conducted by researchers at the Universidad de Concepcion in Chile has developed a new method for estimating pepsin activity in the INFOGEST protocol, which is used to simulate gastrointestinal food digestion. The traditional method for standardizing pepsin activity is time-consuming and requires large volumes of samples, but the new method using a colorimetric technique in microplates offers advantages such as automation, ease of use, and minimal sample and reagent requirements. The study found that the new method produced comparable results to the traditional UV spectrophotometric method and demonstrated high reproducibility.
