Formulation of Caulerpacylindracea as a functional beverage and its feasibility analysis.

Abstrakt: In the coastal region of Serangan, the green macroalga Caulerpacylindracea (Caulerpaceae) has been identified. This macroalga has been consumed as a vegetable by locals. The Caulerpa genus is notable for its nutritional and therapeutic properties. Some species of this genus, including Caulerpacylindracea, have invasive features that allow them to develop rapidly and can be detrimental to the surrounding environment. Therefore, C. cylindracea must be utilized and even processed into more economically profitable products. This study was conducted to determine the feasibility of Caulerpacylindracea as a functional beverage. To identify the best formulation of the beverage, microbial contamination, antioxidant activity, and sensory analysis (i.e., hedonic and scoring) were performed. The results indicate that the third formulation (F3) has the the most significant antioxidant activity (42,2%) and sensory analysis ratings. In accordance with the maximum limit for microbiological contamination specified by BPOM standard, all functional beverage formulations tested in this study were safe for human consumption (<104 Colony/g for bacterial contamination and <103 Colony/g for yeast-mold contamination).
