Abstrakt: Kendal, one of the districts in Central Java has the potential of the large number of rabbit farming businesses. Rabbit meat has a better nutritional content than other livestock meat because it has low cholesterol levels. However, in the era of pandemic, the high number of rabbit populations is not commensurate with the market demand. Nugget is one of the applying meat processing technology into a ready-to-eat frozen food product to expand downstream businesses that is suitable as a protein source, has long shelf life and able to withstand low mobility. The initiation of business down streaming is carried out through community service activities in the form of socialization and training which begins with a pretest and ends with a posttest and questionnaire. Based on the result, the knowledge about rabbit meat processing of the trainees has increased as well as the level of satisfaction was big (very satisfied 87.5% and satisfied 12.5%). The training on making rabbit nuggets for livestock groups is going well and is useful as an initiation of downstream business so that it can become a superior commodity for rabbit livestock groups in Kendal Regency in the future.
