Plant origin alternatives to classic dairy products.

Abstrakt: The article analyzes the European and American markets of vegetable products in order to determine the popularity and demand for these products. The main reasons for the increased interest in herbal products, associated with a more attentive attitude to one's health against the background of diseases of the cardiovascular, endocrine systems and organs of the gastrointestinal tract, have also been studied. The technological features of the production of herbal analogs of dairy products abroad and the possibility of their implementation at domestic enterprises are considered. To do this, we analyzed scientific publications on the research topic over the past five years. As a result of systematization and generalization of the obtained data, it has been proved that plant products cannot completely replace classic dairy products; however, the demand for plant analogues can give an additional impetus to manufacturers to create new and non-standard products that will undoubtedly occupy their niche.
