Abstrakt: |
In this article, the properties of bacterial concentrates of lactic acid microorganisms were studied with the aim of their use in the production of food products. The technological and organoleptic parameters of starter cultures of three generations of each bacterial concentrate were studied in detail, and their microscopic picture was also studied. Based on the data obtained, a conclusion was made about the quality of the analyzed starter cultures, their activity and the possibility of further use. [ABSTRACT FROM AUTHOR] |
