This study report implementation of Good Manufacturing Practice (GMP) in three small and medium rendang processing industries located in the city of Padang. The implementation of GMP is carried out through 3 stages starting from a preliminary survey, observing 18 aspects of GMP and providing suggestions for improvement. The effectiveness of actions taken and GMP implementation was compared by the total percentages of non-conformities and conformities. Non-conformities are divided into 4 types minor, major, and critical. Based on the results of direct observations and interviews, it was found that the discrepancies for the three industries were 3.91%, 11.73% and 15.08%, respectively. Most of the non-conformances were found in the aspects of buildings, employees and maintenance and sanitation programs. In conclusion, from a total of 179 elements observed, the three rendang industries had implemented GMP well, although there were some discrepancies found. [ABSTRACT FROM AUTHOR] |
