Study of the mass conductivity coefficient during convective drying of pea.

Abstrakt: Data on the mass conductivity coefficient (moisture diffusion) of pea grains during their convective drying were obtained experimentally (by the zonal method) - in the form of a dependence of this coefficient on the moisture content of the material at different temperatures of the drying agent. In accordance with this method, the concentration dependences of the mass conductivity coefficient were determined from experimental drying curves obtained in the absence of external diffusion resistance. When analyzing experimental data, it was assumed that the dominant mechanism of moisture transfer in the material is activated molecular diffusion, which is described by the Arrhenius equation. It is shown that the temperature dependence of the mass conductivity coefficient (moisture diffusion) during convective drying of pea is satisfactorily described by the Arrhenius equation. The values of this equation parameters are found. The obtained data on the mass conductivity coefficient can be used in engineering calculations of the kinetics of convective drying of peas based on theoretical methods (analytical or numerical).
