The present study was conducted to investigate the micro-mineral Fe, Zn, Mn, Cr, and Co profile of foodstuff commonly consumed by the population. Sampling was conducted at the four traditional markets in Pandeglang, Cianjur, Magelang, and Bangkalan. Samples were taken include food sources of carbohydrates, vegetables, fish, legumes, tofu, and tempeh. Food samples were cooked before being analyzed for their micro-mineral content using neutron activation analysis techniques. Micro mineral concentrations of Fe, Zn, Mn, Cr, and Co in the same type of sample from 4 sampling locations have a fairly large standard deviation, this indicates that the micro mineral content in the sample varies depending on the sampling location. Tofu and tempeh are great sources of micro minerals. Fe content in the vegetables: Spinach, water spinach, papaya flowers, and long beans >150 µg/g. These four types of vegetables have good levels of micro-minerals. Micro-mineral content in marine fish is higher than freshwater fish, squid and shrimp have Zn levels (41-67 µg/g), higher than other fish samples. Nuts have good micro mineral content, and soybeans have the highest Fe content compared to others (96.75±1.9 µg/g). From this research, it can be seen that the micro mineral profile in various food ingredients commonly consumed by the public. With this data, it can be used to estimate mineral intake through food consumption and find out what types of foods are rich in micro minerals. [ABSTRACT FROM AUTHOR] |
