Abstrakt: FEATURES San Francisco chefs Rheema Calloway (left) and Ronnishia Johnson veganize soul food and American classics, like their Cajun "Sucka-free-tash" (opposite, recipe page 76), which is loaded with bell peppers, yam, kale and okra. Whisk all-purpose flour, whole-wheat flour, baking powder, salt and the remaining 1 tablespoon brown sugar and 2 teaspoons cinnamon in a large bowl. Combine mangoes, 1 teaspoon oil, 2 teaspoons shallot, 1 teaspoon jalapeno and ¼ teaspoon salt in a third bowl.
