In exploring the effects of different strains and inoculation methods on primary (glycerol, acetic acid, and ethanol) and secondary (ethyl ester and acetate esters) metabolites, four Hanseniaspora uvarum strains and three Saccharomyces cerevisiae strains were used for mixed fermentation, and the contents of glycerol, acetic acid, ethanol, ethyl esters, and acetate were determined. In summary, the results obtained in this experiment indicated that different strains and inoculation methods had effects on primary (glycerol, acetic acid, and ethanol) and secondary (ethyl esters and acetate esters) metabolites. For glycerol, the inoculation method had a greater effect than the different strains. In the case of acetic acid and ethanol, the inoculation method also had an impact, but the impact of different strains was more pronounced. For ethyl esters and acetic esters, sequential inoculation had a significant effect on ethyl ester and acetate, by increasing their content and variety. [ABSTRACT FROM AUTHOR] |
