This work consists on the development of a low-cost, single-probe sensor for the monitoring of beer fermentation process. For the monitoring of the process, three different optical principles of operation are being used simultaneously: Surface Plasmonic Resonance (SPR) through U-shaped probes coated with 70 nm gold thin film, transmittance, and light scattering sensors. The sensors responses are read by a microcontrolled optoelectronic interface. The configuration allows the simultaneous reading of the four sensors with a voltage signal response.
