Effect of Some Parameter on Lactic Acid Fermentation from Pineapple Waste by Lactobacillus delbrueckii.

Abstrakt: The liquid pineapple waste from industrial of pineapple cannery contains mainly sucrose, glucose, fructose and other nutrients, if these wastes discharge to the environment intreated, they could cause a serious environment problems. Beside their pollution and hazard aspects in many cases, the waste might have a potential for recycling to get raw material or for conversion into useful product of higher value added products. Lactic acid is a normal organic acid, has long been of use in the pharmaceutical, chemical, cosmetic and food industry. Recently, lactic acid has been considered to be an important raw material for production of biodegradable lactide polymer. Batch fermentation of pineapple waste was studied in 3 litre stirred fermenter (Biostat B Model). Effect of some parameters such as temperature, pH, Inocolum size, initial substrate concentrations and nitrogen source were studied. The maximum lactic acid production was obtained 54. 97 g/l or 79 % yield at process condition of pH: 6.00, temperature: 40°C, inoculum size: 5 %, 5 % of yeast extract as nitrogen source and initial sugar concentration of 70 g/l.
