Abstrakt: The article offers information on Loretta Harrison who opened Loretta's Authentic Pralines in New Orleans, Louisiana, and first African-American woman to own and operate a praline company in the Crescent City, California, 35 years ago. It further discusses the history of New Orleans' signature cuisine, the praline which originate in France, and also mentions about the recipe of Pralines in New Orleans style by using sugar, pecan and unsalted butter.
