When recession forced Susan and Robert Bruce to look for alternative ventures for Marakei, their 300ha sheep and cattle property on the outskirts of Canberra, Australian Capital Territory, they considered farming everything from wildflowers to emus. In the end, it was a love of smoked foods that in 1991 led English-born Susan to set up Poachers Pantry, a business that has now expanded to include Smokehouse Cafe and Wily Trout vineyard. Before long, the competitiveness and innovation of Poachers Pantry was recognised by the Federal Government, which gave it a Best Practice Award in 1994 and a grant that enabled the Bruces to source the necessary business and manufacturing skills for expansion. |
