Microbial control in cheesemaking.

Abstrakt: The article presents information on the microbial contamination of food and beverage products. It is mentioned that water contamination can significantly affect the final product and despite strict regulation of food production and distribution in U.S. there is little secondary inspection of these products. The details of the microbial contamination including the ones effecting the cheese production and their categories and the routes of contamination are discussed in the article.
