Abstrakt: Competing Interests: Declaration of competing interest We declare that we have no financial or personal relationships that could inappropriately influence or bias the content of this work. Our involvement with the 70th International Congress of Meat Science and Technology (ICoMST) was as Chair/Co-chair of the organizing committee, and this position was solely related to academic and scientific responsibilities. There are no conflicts of interest regarding the content of the text prepared for the special issue of Meat Science related to the congress. No experimentation involving human or animal subjects was conducted in this study. Therefore, informed consent was not applicable.
