Summary: Minor changes in the chemical structure of vitamins can cause major differences in their binding to proteins and therefore in their biological activity at the cell, tissue, and organ levels. Illuminating newer areas of vitamin function, this book explores the interface of physiological vitamin function and pharmacological vitamin action. It summarizes the current knowledge base with regard to vitamin-binding proteins, addressing the effects that lead to both normal physiological activity and pharmacological effects with significant therapeutic potential in a wide spectrum of disease processes. |
