Effects of primary caregiver or young children's breakfast nutrition education on breakfast intake behavior in young children

Dietary habits in early childhood last the long influence until adulthood. Primary caregiver is the main factor fr the children's establishment of dietary knowledge and behavior. The purpose of this study was too observe whether young children’s or primary caregiver’s in nutritional education affect young children’s knowledge, behavior, and attitude of breakfast consumption.The researcher used convenience sampling mode, selected age 5 to 6 total 75 young children and 31 primary caregivers from two kindergartens on Taichung Shalu area. Group divide: kindergarten A as control group (N), young children and primary caregiver’s nutritional education group (CP). kindergarten B as young children nutritional education group (C) and Primary caregiver’s nutritional education group (P). Primary caregivers were given six sheets, A4 sized handouts for nutrition education. Young children were used face to face teaching, cartoon character Dora﹑pictures and song for 20 minutes each time for nutrition education. Both nutrition education were executed twice a week, for 2 weeks followed by wash out for two weeks, and then crossover trial. Nutrition questionnaire was given at the first and fourth week for both young children and their caregivers. The comparison of the data of young children and primary caregiver’s knowledge, behavior, and attitude inter- and intra-group by using PASW Statistics 18.The breakfast knowledge and attitude but not behavior of primary caregiver of group CP, C and P increased after breakfast nutrition education. The breakfast knowledge, attitude and behavior of primary caregiver of four groups were no significantly different within group in the fourth week. The breakfast multi-color, multi-categories behavior of young children of group P assessed by primary caregiver were significantly increased within group in the fourth week. The breakfast knowledge of young children of group CP and C were significantly higher than group N and P after breakfast nutrition education. The breakfast behavior of young children of group C was significantly higher than group N and P afer breakfast nutrition education. The breakfast knowledge, attitude and behavior of both primary caregiver and young children of four groups were no significantly different within group afer cross over study. The breakfast knowledge and behavior of young children of four groups were significantly increased within group in the ninth week.In conclusion, the breakfast knowledge and behavior of young children were significantly increased before and after crossover study. The breakfast behavior of young children assessed by primary caregiver was significantly increased and may promote the food selection frequency in multi-species and multi-color foods for young children. Face to face nutrition education and the involvement of primary caregiver were both important way for young children to establish the dietary habit.
