Popis: In article questions of influence on a human body of replacement of dairy fat on artificial substitutes of fat in dairy products are taken up. Possible ways of biotransformation of artificial substi-tutes of dairy fat by microflora of intestines and alternative approaches to manufacture of low-calorie dairy products are considered.
