Popis: | The article deals with experimental impedansometry of fresh chicken meat (chicken fillet), meat after storage in the refrigerator and the meat with features of spoiling. The changes of impedance under the effect of different frequency alternating electric current passage through the pieces of meat of different freshness were established. It was experimentally proved that the dispersion curve of fresh chicken meat is in the range from 700 to 3800 Om, the meat with features of spoiling from 142 to 158 Om. The histological study of tested chicken fillet pieces to confirm the effectiveness of the portable device for determining the electric conductivity of biological membranes was carried out besides that. |
