Aspergillus flavus, Penicillium viridicatum and Fusarium graminearum were grown in monoculture in viable, irradiation sterilized cracked maize and rice kernels and on maize and rice malt extract agars. Growth was monitored on grain and on agar at three water activities ( A w ) (0.98, 0.95 and 0.90) and two temperatures (25° and 16°C) and toxin production analysed in the grains after 12 d incubation under a similar range of conditions. Although all fungi grew on both cereals, aflatoxin and zearalenone were formed only in maize and ochratoxin A only in rice. Aflatoxin production was highest at 0.98 and 095 A w at 25°, zearalenone at 0.98 A w /25° and 095 A w /16°, while much ochratoxin A was produced at all A w values at 25°. At 25° on agar Penicillium and Aspergillus grew best at A w 0.95 whereas Fusarium grew best at A w 0.98. |
