Popis: Summary The pH, rennet coagulation, heat coagulation and curd tension of the milk produced by a group of cows receiving cottonseed meal as the only concentrate were compared with the same properties of milk produced by a comparable group of cows receiving a normal concentrate mixture. These properties of the milks follow the same general trend as the differences in composition of the two milks. The milk from the cottonseed meal group had a higher pH than that from the control group. The slight difference observed during the first few months increased as the difference in total solids increased. The milk from the cottonseed meal group required longer to coagulate by rennet than that from the control group after about the first five months of the feeding trial. Variable differences were recorded for the heat coagulation of the milks. The data suggest a practical problem relative to the heat stability of the evaporated products produced from milk of cows receiving a high level of cottonseed meal in the ration.
